Rub BBQ 101
Instructor: Pit master Jared Leonard. Half of the husband-wife team behind Rub BBQ Company in Rogers Park, Leonard crafts a fourteen-spice meat rub so tasty that sauces step to the side.
Course description: Each three-hour BYOB session starts with a primer in barbecue basics (regional styles, meat selection and preparation, smoking, rubs, marinades) and closes with hands-on prep work.
Midterm: Prepare decadent sides like truffle mac and custard cornbread, or try your hand at sauces (smoky ’n sweet, citrus chipotle).
Final exam: Test the fruits of your labor at a gourmet four-course meal. Possible topics include brisket, pulled pork, ribs, sides.
Extra credit: Re-create the magic at home from a mini cookbook (complete with wine and beer pairings) and three jars of Rub’s famed barbecue sauce.
